Slow Cooker Chicken Tacos

Anyone who frequents my blog knows how I feel about cooking: why can't dinner just make itself?  I have a baby who's not eating everything we do just yet, and a husband who works evenings and isn't even home at dinnertime.  So dinner for me is pretty much just warming up a can of soup, most of the time.

Every once in a while, I run across a recipe that's simple enough to make it into our meal rotation, though - and this slow-cooker recipe is about as close as it gets to dinner making itself. ;)

Slow-Cooker Chicken Tacos


Prep time: 10-20 minutes, depending on what kind of toppings you enjoy
Cook time: 4-6 hours

What you'll need:
  • 1.5 - 2 lbs. chicken breast
  • 1 package taco seasoning
  • 1/4 c. water
  • Shells, cheese, lettuce, and/or anything your family puts on tacos
Add your water and chicken into your slow cooker, and just dump in the taco seasoning.  It's a very unceremonious prep.  I honestly don't even bother to stir it.  


Cook for 4-6 hours on low.  If I know I'm running short on time, I have cooked the first hour on high and then turned it down for the remaining time before, which also works just fine as long as you're around to remember to turn it down.

When you pull it out of the slow cooker, it should be pretty well falling apart.  You can use a pair of forks to shred any big chunks.  The first time I tried it, I was surprised at how moist the chicken stays.  This has become one of the go-to recipes in our house.

Then just add it to some tortillas, add your toppings, and enjoy!


Now... I would like for the dishes to be able to wash themselves. ;)

  11. Awesome, I just made Chicken tacos last night and planned it to late to put it in the crockpot so I had to boil the chicken, shred it and then add the seasoning. Chicken Tacos are great and I cant wait to next time just put it in the crockpot and let it do the work.
